DELICIOUSLY HEALTHY COURGETTI BOLOGNESE

This recipe is a simple dinner you can make in less that 10mins, it is delicious and by swapping the regular pasta for some zoodles and draining the mince you are reducing the calories by over 75% (according to my calorie counter). And if you are like me this means there is room for dessert :).
 This is a child's serving btw ;)


Ingredients
  • 2 large courgettes, cut into strips with a julienne peeler (you can buy one here)
  • 1 fat garlic clove, crushed
  • 1 red or green pepper, chopped
  • 100g of minced beef (the fat percentage does not matter for now)
  • 1 tablespoons of tomato puree
  • ½  can of chopped tomatoes
  • pinch of brown sugar (optional)
  • sea salt and black pepper
  • ½  a stock cube
  • 1 teaspoon of red wine or balsamic vinegar

The Bolognese Sauce

  1. Brown the mince and drain excess oil- I use a sieve and some paper towel
  2. Fry the onion and garlic gently in a teaspoon of olive oil
  3. Add the mince to the onion and garlic and lightly fry
  4. Then add the tomato puree,stock cube and pepper and stir fry the spices into the mince
  5. Add the chopped tomatoes, the pinch of sugar and the vinegar, stir and simmer for about 10 mins.



The Courgetti

  1. Wash the courgettes and shred using a julienne slicer or a spiralizer
  2. Dry fry the shredded courgettes in a greased pan for 45-90 seconds. This is enough to cook it a little without making it soggy.
Et voila, dinner is ready!
