100 CALORIE CHOCO-BERRY DESSERT RECIPE- as promised ;)

Hello everyone hope you had a lovely weekend. Last week in my Sweet Potato Crispies post I promised you guys this dessert recipe. I am one of those people no matter how stuffed I am, Dinner is never complete without dessert. I decided to come up the perfect dessert to satisfy my post dinner sweet tooth without the excess calories.

I set some parameters for a dessert that can scratch the itch, it must be...
  1. Rich and Creamy
  2. Sugar free
  3. Low Carb
  4. Under 100 cals or 150 at most.
The good news guys that is that I think I accomplished this goal with the Choco-Berry dessert. It is made up of layers of vanilla flavoured creamy greek yoghurt, frozen mixed berries, whipped cream, rich dark chocolate sauce and some nuts or granola for some crunch. This is so yummy I tell you and at 100calories per serving an absolute winner.

Recipe below...

Ingredients
60g of Mixed Berries
50g of 0% Greek Yoghurt (add 2 drops of natural vanilla essence for flavour)
10g of  light Whipped Cream
5g of Perfect Sweet (Xylitol)
Truvia 2 teaspoons

Topping
Chocolate Sauce 5g of unsweetened cocoa powder
5gs Chopped Nuts/ Granola (Optional will increase the calorie count by 25 for granola or 30 for chopped nuts)

For the Chocolate sauce
1. Mix the cocoa powder with a sweetener of your choice I use 5g xylitol and 2 truvia packets
2. Add a teaspoon of water at a time and mix till thick and runny.
3. Microwave for 10 seconds and stir, repeat this step till it reaches your desired consistency.

Here is how to put it together

Put half the greek yoghurt at in a glass
Layer  half the frozen mixed berries
Add another layer of yoghurt
Then a layer of frozen mixed berries
Top with a generous squirt of Light whipped cream, chocolate sauce and granola or chopped nuts.

The chocolate sauce can be too rich for some people so start with a little  and add more if needed.

Enjoy :) x x x
