Hey guys hope you are having a great week. I am currently obsessed with smoothie bowls and can't wait to share todays breakfast bowl experiment with you.

Smoothie bowls are great way to start the day, filled the antioxidants, vitamins, fiber and with many health benefits. The toppings, high fiber content helps keep you fuller for longer and eating it with a spoon ensures you enjoy and savour every spoonful . Think of it as a soft serve breakfast icecream!  

I grew up drinking Ribena and loved it greedily. One day when my parents where driving me home after being admitted in the hospital they stopped at a supermarket and bought an bottle of concentrated Ribena and left it in the back seat. Before we arrived home without anyone noticing I drank it and though it didn't taste right my greed didn't not let me stop. You can guess what happened after that...intense and unbearable tummy aches and many unmentionables. Thank goodness I have been healed from the food greed and my love for Ribena was not destroyed as I  later learned about diluting it.

Today's recipe is as easy as A B C, it is perfect for a breakfast or a post dinner dessert(make it 3 hours before and freeze).

INGREDIENTS
  • medium apple
  • 20 grams or a  2 handfuls of  frozen blackcurrants
  • 5 chopped dates
  • Vanilla extract
  • chopped mango or pineapple(Optional)
  • 50ml of water

  • TOPPING // red currants almonds, roasted and raw pumpkin seeds sunflower seeds and flaxseeds 

  • INSTRUCTIONS
  1. In a blender combine the apple, dates and black currants.  Add water slowly till its gets to your desired consistency. Blend until a smooth liquid.
  2.  Pour into a bowl and garnish with more currants, nuts, seed or granola. 
  3. Eat with a spoon and enjoy :).

    1. The easiest way to get blackcurrant is in any berries or summer fruits mix in the the frozen section. They are chock full of black and redcurrants, I usually get a bag and separate them. x
