PRAWN STIR FRY WITH NOODLES (100 CALORIES per serving)

Hello people hope you have had a good start to the week. My personal goal for this week is to maintain a positive attitude and spirit, believe me it is not as easy as it seems but I am determined. I will tell you how I get on as the week progresses.

Today I will be sharing one of my favourite 'quick food' recipes, it is very low in fat, carbs and  calories yet very filling and full of fibre. The secret ingredient is shirataki noodles made from Konjac a Japanese plant, I will do a review in another post. 




Here is how I make the stir fry.


Serves 2

Prep time-5 minutes
Cooking time- 2 minutes

Ingredients

  • 100g Courgette
  • 100g Carrots
  • 50g Prawns
  •  200g Slim Noodles
  •  1 Onions
  •  A pinch fresh ginger
  • 1 Calorie spray
Stir fry sauce
  •  2 teaspoons of Soy sauce
  • 1 teaspoon of tomato puree
  •  2 teaspoons of Red wine vinegar
  •  1 Maggi cube
  • Chilli
  • salt
  • Ginger Powder
Preparations

Slice your vegetables into julienne or ribbon slices( this will help it cook faster).
Rinse the noodles 3-4 times in water then boil for 3 minutes and drain.
Make your stir fry sauce by mixing the ingredient together, taste and adjust according to preference


Directions
  • Toast the cashews in a frying pan for till golden brown and set aside and set aside
  • Add some oil to a very hot wok and stir fry Onions and ginger for 1minute
  • Add the courgettes, carrot and half the stir fry sauce and sauté 
  • Then stir in the noodles and stir fry sauce for 1 minute and
Viola!! Its done garnish with some toasted sesame seeds!
