Hi guys hope you have had a great weekend! I am away on holiday at the moment and have been taking lots of wonderful pictures for you. To celebrate meatless Mondays I have a wonderful salad recipe for you, I dare you to try it and be amazed! I made some for my lunch with vegan blogger Tomi from www.vegannigerian.com and we kept going back for more. This is so yummy and tasty, I could eat this everyday send most importantly it super healthy and nutritious. It contains everything from protein, healthy fats, carbs, vitamin c, folic acid, iron and many more vitamins.
I usually combine the ingredients and dress with balsamic vinegar, lemon juice and a sprinkle of sea salt. I like to keep the dressing light to keep the salad light and fresh tasting.

DeleteKale again. My cousin loves kale!! I've found that I quite like it myself now - I enjoy the texture but baby spinach still has my heart. Anyhoo, this looks good! I should have a meatless day in my week but maybe a low-carb day or three would be better :)
ReplyDeleteI know what you mean about baby leaf spinach, they are so tasty especially sliced tomatoes and sea salt! Meatless days are always good and a few low carb days here and there does wonders ;) x
