Hi guys hope you have had a great weekend! I am away on holiday at the moment and have been taking lots of wonderful pictures for you. I am looking forward to sharing my holiday diary with you, if you have not liked Anemistyle on Facebook now is the time as you do not want to miss hearing about me getting chased by a French dog, monkey forest adventures, canoeing on the dordogne, holiday fitness tips, getting rid of holiday tan and many more. 

To celebrate meatless Mondays I have a wonderful salad recipe for you, I dare you to try it and be amazed! I made some for my lunch with vegan blogger Tomi from and we kept going back for more. This is so yummy and tasty, I could eat this everyday send most importantly it super healthy and nutritious. It contains everything from protein, healthy fats, carbs, vitamin c, folic acid, iron and many more vitamins.

I usually combine the ingredients and dress with balsamic vinegar, lemon juice and a sprinkle of sea salt. I like to keep the dressing light to keep the salad light and fresh tasting.

  2. Kale again. My cousin loves kale!! I've found that I quite like it myself now - I enjoy the texture but baby spinach still has my heart. Anyhoo, this looks good! I should have a meatless day in my week but maybe a low-carb day or three would be better :)

    1. I know what you mean about baby leaf spinach, they are so tasty especially sliced tomatoes and sea salt! Meatless days are always good and a few low carb days here and there does wonders ;) x
