THAI GREEN CURRY SALAD



Hello friends, hope you are having a great week. I am pleased to be sharing today's Thai green curry salad recipe with you. This salad is delicious, quick and easy to make and will satisfy every thai food craving.
Curries are one of my favourite meals, whether is it Thai, Indian or Nepalese I enjoy them all. There is a new(ish) Thai restaurant in Oxford called Oli's Thai with incredible reviews and after reading countless amazing stories I was semi desperate to try the food already. I tried calling to book a table for 3 consecutive days but could not get through, when I finally got through and tried to book there was a 3 month wait!! The food better be worth it.
In the mean time I decide to console myself with this healthy and low calorie Thai green curry salad cos come the 25th of May I am having a real splurge. 

Here is how I made the salad.




PREP TIME
TOTAL TIME

This is a very easy-to-make nutty, healthy and crunchy snack with just 3 ingredients. You can add more herbs and spices according to your taste. Perfect satisfying the cracker/biscuit craving.

INGREDIENTS

fOR THE SALAD

  • 1 Medium courgette
  • 1/2 a red bell pepper 

FOR THE DRESSING
  • 2 teaspoons of sunflower seed or coconut milk
  • 1/4 teaspoon of chopped ginger
  • pinch of salt
  • 1/4 of a teaspoon of garlic
  • 1/4 of onion
  • 1/4 teaspoon of curry powder( turmeric,cumin)
  •  hanful of chopped lemon grass (optional)
  • Juice of 1/2 a lime.
INSTRUCTIONS


  1. Wash courgette and slice into noodles with a spiralizer or Julienne slicer (Kitchen must have and you can buy one for super cheap here).
  2. Slice the red pepper into thin and long slices.
  3. Whiz the dressing ingredients in a blender till smooth
  4. Stir the dressing  into courgette noodles.
  5. Add the red peppers and toss.
  6. Sprinkle some sesame seeds, or flaked almonds on the top and enjoy with you cutlery of choice ;)
