On my walk this morning I noticed there were blackberries everywhere and I initially ignored them as I am more of a strawberry and blueberries kinda girl.
Towards the end of my walk I came across some more and these berries looked bigger, darker and softer so I decided to try one; to my amazement it was sweet juicy and did not have that tangy taste some berries seem to have so I decide to pick as much as my hands could carry.
When I got I started experimenting and ended up with these 4 ingredient Raw Vegan Blackberry Bars and they are amazing! (Le Hüsband loved them btw). I made with them with blackberries, oats, sultanas and rolled them in desiccated coconut.
They are gluten free, dairy free, peanut free, soy free,Vegan, raw and super simple to make. Enjoy these for breakfast or pack in lunches and for snacks.
Blend with a blender or food processor
Mould into bars
Coat bar with coconut (optional)
Le Hüsband said they also work as a dessert with warm cream on top and some chocolate drizzle, they taste like Blackforest Gateaux!
